Microwave cauliflower with tangy cheese kids love.

Cheesy cauliflower with a tangy taste the kids love. Yep, my grandson asked me for the white round thing with cheese on it. His description could only be the tangy mustard cauliflower I made for him this week. His mother also liked this cheesy cauliflower way back in the 1970s.

That’s when we got our first Sharp Carousel microwave. It came with instructions and a basic cookbook. However, I took a microwave cooking class offered locally, to learn more about this new quick-cooking oven. Many of those recipes I still use today.

Time-saving is a good thing for busy Moms

This recipe is so quick and easy, plus the kids can help too. For the little ones that don’t like to eat their “greens,” this is a winner. It’s not green! If they like potatoes and mac and cheese, it’s a done deal! Try it, they’ll like it.

  • 1 medium head of cauliflower
  • 1/2 cup mayonnaise
  • 1/4 teaspoon instant minced onion, or 1 teaspoon fresh onion
  • 1 teaspoon prepared mustard
  • 1/2 cup finely grated sharp cheddar cheese

Remove outer leaves, rinse and core cauliflower. Pace it in a casserole dish and cover with plastic wrap or cover. No need to add water. Microwave for 7-8 minutes or until just about tender. Let stand for 3 minutes.

Combine mayonnaise, mustard, and onion in small bowl. Spoon mix onto cauliflower. Sprinkle with cheese. Directions say to microwave 70% for 2 minutes, but I use full power for 2 minutes. Cook until cheese melts. Let stand for a few minutes before serving, to ensure cheese is not too hot.

Serves 6 adult sized wedges.

Tip: Pick the largest head available.

Tip: Other cheeses can be used, the original cheddar, finely grated, is our preference.
